"We're not concerned about bring-
ing in Jewish guests, but we need to
educate non-Jewish customers so
they don't feel intimidated," he says.
"The cookbook may put people at
ease."
Milk & Honey, Unique's 14th
restaurant, is located off the front
lobby of the JCC and will utilize
both the building's catering kitchen
and new display kitchen created
inside the restaurant.
As far as sharing the Center's diners
with the six-week-old David's Grill, a
casual, carryout and counter service
restaurant, Prentice says there is room
for them both. "Their existence is very
different from ours," he says
Explains Sorkin, "David's Grill is
very specifically designed for faster
food service, like hamburgers ; hot
dogs and french fries. It serves the
outdoor pool and InLine hockey area
with quick, quality foods. Milk &
Honey, on the other hand, provides a
dining experience."
"From the food perspective, the
level of dining here will be as intense
as any of our fine dining restau-
rants," Prentice says. "The restaurant
itself is very casual, as it should be in
a health club. The service is friendly,
but the food is serious stuff.
"But going to the JCC for dinner
takes a little work. People don't think
of the Center as the place for a
restaurant."
Prentice hopes that, "the restaurant
will be reviewed well and customers
will make the trek to the JCC to
dine there." And he wants them to
take the time to consider Milk &
Honey's motto: "A great restaurant
that just happens to be kosher." ❑
