QUICK TURKEY CHILI

1 pound ground turkey breast
2/3 c. chopped onions
1 can (28 oz.) seasoned diced toma-
toes
2 T. chili powder
2 t. granulated garlic (not garlic salt
or powder)
1 t. ground cumin
1 t. sugar
1 t. salt
2 T dried parsley flakes
1/2 t. ground cayenne pepper (or to
taste)
1 can (14 oz.) white kidney beans
(canellini)
Brown turkey in a large pot over
medium-high heat, breaking it up with
a fork as it cooks. Add remaining ingre-
dients, except beans, and bring to a boil.
Reduce heat and cook, stirring occasion-
ally for about 30 minutes.
Add beans and cook for 15 minutes
more. Makes 6-8 servings. ❑

2 pounds boneless and
skinless chicken breasts,
cooked, cooled and
shredded
1 c. roasted cashews
(with or without salt)
1 c. chopped scallions,
white and green parts
2 c. pea pods, cut diago-
nally into strips
1/2 c. chopped fresh
cilantro
1 can (10-14 oz.) man-
darin oranges, drained
12 c. or more shredded

Easy alternative to applesauce. If
you puree this mixture in a food
processor, you'll have an extra
delicious applesauce. You can also
make this with ripe pears.
4 golden delicious apples,
unpeeled
2/3 c. water
2 t. flour
1 t. cornstarch.
2 T. butter or margarine, melted
1/2 c. brown sugar
1/2 t. ground cinnamon
Preheat oven to 350F. Spray a six
cup or larger glass or ceramic baking
dish with nonstick cooking spray.
Cut the apple in half, remove the
core and seeds, and cut each half
into 8 slices. In large bowl, stir the
flour and cornstarch into the water
(you may need to use your fingers to
break up lumps). Stir in the melted
butter, brown sugar and
cinnamon. Add the apples
and toss well with the water
mixture.
Pour this into the pre-
pared dish and cover with
foil. Bake for 30-40 min-
utes, stirring once or twice
until the apples are softened
and bubbly. Makes 4 serv-
ings.
