dream of Paul, who has always want-
ed to open his own restaurant that
could take him back to his French
roots ... with a more French tech-
nique of kitchen preparation and
presentation.
He enjoys specializing in
European fish like French turbo,
fresh (not frozen) Dover sole and
fresh escargot, not from a can, raised
on a farm in France and sent directly
to Cuisine.
There is an entirely new look now
at Cuisine ... Whereas before, Il
Centro was more on the darkened
side, the appearance is now much
lighter ... with new light fixtures,
