1/2 cup chopped pecans, lightly
toasted
1 cup fresh chopped parsley
12 cups torn romaine lettuce or mixed
greens (optional)

Dressing:

2 T. vegetable oil
1 T. walnut oil
1 T. soy sauce
1 T. red hot pepper sauce (such as
Tabasco)
1/4 cup rice vinegar
1 T. sugar
salt and pepper to taste

Make salad: Steam or blanche the
pea pods. You can also microwave
them in a plastic-wrap topped
microwave-safe dish with 1/2 cup
water for 3 minutes on high. Rinse
under cold water and drain very well
to remove moisture. Toss the pea
pods in a large bowl with remaining
ingredients and set aside.
Make dressing: Place all the ingre-
dients in a jar with lid and shake well
to combine. Toss the salad with the
dressing and serve over greens if
desired. You can double the dressing
if you like extra to drizzle over the
salad. Makes 8 entree servings.

SEARED AHI TUNA WITH
MANGO SALAD

Salad:

8 cups romaine lettuce that's been cut
into 2-inch pieces
2 mangoes, peeled and cut into 1/2-
inch cubes
1/2 cup chopped fresh cilantro
lemon or lime wedges, garnish
Tuna:
1 T. olive oil
4 6-oz. tuna steaks (each about
3/4-inch thick)
salt and fresh ground pepper

Red or Green Leaf or Romaine Lettuce

Assorted varieties.

12 oz. pkg.

Dressing:

1/4 cup brown sugar
juice of 1 lemon or lime
2 T. red wine vinegar
1 T. minced fresh ginger
1/4 cup olive oil
1/4 cup soy sauce
salt and pepper to taste

Combine the dressing ingredients
in a small saucepan and heat over
medium high heat until the sugar is
dissolved. Set aside to cool.
Toss the salad in a large bowl. Add
the dressing and toss well to coat the
salad. Arrange the salad on individual
dinner-sized plates.
Heat oil in a large non-stick skillet
over medium-high heat. Season tuna
steaks with salt and pepper and place
them in the skillet. Cook, turning
once or twice until just seared on the
outside and still undercooked inside,
or cook the steaks to your liking.
Remove from skillet and slice thinly
and arrange over the salad. Makes 4
entree servings._ J
