any given dish ... so that each spice
makes its own statement.

Noodles, or chow-chow, as it is
called, like rice, or bhaat, are a staple
in Nepal ... and so delicious mixed
with vegetable, chicken or lamb ... The
national dish of Nepal is daal bhaat,
boiled rice with a thin lentil sauce,
accompanied by curried vegetables and
possibly a dab of pungent pickle.
Nepal is a Hindu country and so
you won't see any beef items on the
menu ... Cows are sacred in the Hindu
religion ... In Nepal it is illegal to slay
them.
And here's something that is not
Nepalese ... but very delicious ...
Rocky's own excellent tuna salad or
chicken salad ... with his secret blend
of ingredients that would defy imagi-
nation of the most stringent culinary
expertise ... It may not be Nepalese,
but Rocky's treatment of tuna salad
and chicken salad is prepared with
Nepali influence.
Those who may have had Nepali
food in New York or a few other large
cities, may have a favorite dish not
