Not too much curry is used ... and
few dishes are too hot or spicy ...
Although a Nepalese cook like Rocky
has a huge range of spices at his dis-
posal, only a select few will be used in
any given dish ... so that each spice
makes its own statement.
Everest Express uses a lot of fresh
herbs ... and grinds its own spices
...garlic, cumin, ginger, coriander, etc.
You'll enjoy the chicken chow-chow
... made with noodles, vegetables,
onions, etc. ... and the chicken chili
that is quite unlike the soupy chili pre-
pared the American way ... or Tareko
Pakuwa, marinated chicken cooked in
the tandoori oven ... and just about
every one of the 12 chicken dishes
served ... including the very popular
Everest Momo, chicken (or turkey or
lamb) dumpling ... that satisfies dis-
criminating taste with an abundance
of enjoyment.
The lamb entrees also in a class of
their own ... Everest Express'
Manakamana Sekuwa, its marinated
lamb chops, are a standout ... as is its
Safari Kozi, roasted lamb marinated
with fried onions and spices.
Noodles, or chow-chow, as it is
called, like rice, or bhaat, are a staple
in Nepal ... and so delicious mixed
with vegetable, chicken or lamb ... The
national dish of Nepal is daal bhaat,
boiled rice with a thin lentil sauce,
accompanied by curried vegetables and
possibly a dab of pungent pickle.
Nepal is a Hindu country and so
you won't see any beef items on the
menu ... Cows are sacred in the Hindu
religion ... In Nepal it is illegal to slay
them.
And here's something that is not
Nepalese ... but very delicious ...
Rocky's own excellent tuna salad or
chicken salad ... with his secret blend
of ingredients that would defy imagi-
nation of the most stringent culinary
expertise ... It may not be Nepalese,
but Rocky's treatment of tuna salad
and chicken salad is prepared with
Nepali influence.
Those who may have had Nepali
food in New York or a few other large
cities, may have a favorite dish not
found on the Everest Express menu ...
But have no fear ... Rocky will make it
for you ... He is that adept and
learned in the preparation of this fine
style of culinary enjoyment.
Everest Express is also a vegetarian
dining paradise ... So many very tasty
dishes from which to choose.
Between Rocky's hotel experience ...
