Manv of the recipes are those of
Rita Rugiero, brought here by her
from Perugia in Central Italy ... Her
aunt, Norina Brunetti, was noted in
the central region of Italy as one of
its greatest chefs, preparing large
feasts for royalty that governed the
area ... It was from her that Rita
learned the art of fine cooking.
Hubby Antonio Rugiero comes
from Calebra in Southern Italy ...
Between the two of them, among
other regions, the food is filled with
much authenticity.
One of her recipes is Antonic
Rita Sauce, usually served with the
homemade pasta ... And unlike
many other Italian restaurants,
Antonio's Alfredo sauce is not made
with corn starch ... Only natural
ingredients like cream, egg yolks and
parmesan cheese ... There are no
additives or preservatives in any of
the dishes ... and everything is made
in-house ... when ordered.
Specialties include Gnocchi Rita:
handmade, light, fluffy potato
dumplings ... Chicken Antonio:
boneless, skinless breasts of chicken
topped with Provolone cheese and
smothered in a creme sauce ....
Spaghetti Carbonara a la Bocelli is
prepared with pancetta and parme-
san cheese, a recipe that the great
opera star, Andrea Bocelli, prepared
in Antonio's own kitchen.
Among the better selections of
vegetarian dishes, one of the
favorites is eggplant parmigiana,
thinly sliced and layered with sauces
and cheese before being baked ...
Also angel hair Arrabbiata, a fresh
chunky tomato basil sauce with
spicy herbs.
The prices are comparatively low
... A 12-ounce veal chop is $16.95 ...
7-ounce veal cutlet is $13.95 ... veal
parmigiana, $12.95; veal marsala,
$14.95; osso buco (veal shank sim-
mered with vegetables in its natural
juices,) $15.95 ... All the veal dishes
are prepared with the fine Provimi
veal ... and include soup or salad,
