SHORTCUT CHOCOLATE CHIF-
FON ROLL CAKE

"This is a family favorite and is
expected to be served every Passover at
Aunt Lorraine's house. It's cousin Adina's
favorite."
1 box Gourmet Chocolate Chiffon
Cake Mix (Lieber's)
1 c. powdered sugar (kosher for
Passover available)
1 c. shaved chocolate or white choco-
late or combination
Preheat oven to 350F. Beat egg-
whites in a large bowl until stiff but
not dry. In a separate bowl, beat cake
mix, egg yolks, oil and water on high
speed for 3 minutes. Carefully fold
eggwhites into barter until eggwhites
are competely incorporated.
Line jellyroll pan with parchment
paper or wax paper. Spread the batter
in the jellyroll pan and bake for 30
minutes. Remove the cake from the
oven. Using a long piece of parchment
or wax paper on a flat surface, careful-
ly roll the cake, starting at a shorter
side, while it is still very warm, into a
log. Set the cake aside to cool while
you prepare the filling.
Whip the cream in a large bowl
almost stiff. With the motor run-
ning, sift in the sugar and cocoa and
continue beating until the cream is
stiff.
Carefully unroll the cake and
spread half the whipped mixture over
the cake. Reroll the cake and place on
a serving dish. Spread the remaining
cream mixture over the cake and gar-
nish with shaved chocolate. Cream the
plate with a paper towel to remove
