Crust:
1 c. matzah cake meal
1/4 c. brown sugar
1/3 c. margarine, softened
1/2 c. chopped pecans
Filling:
1 (8-ounce) package cream cheese,
softened
1/4 c. sugar
1 T. grated orange rind or zest
1/4 c. orange juice
1 teaspoon vanilla or rum
Heat oven to 350F. Combine cake
meal, brown sugar and margarine in
the bowl of a food processor. Pulse 5
or 6 times. Add the nuts and pulse 3
or 4 times more until the mixture is
crumbly. Reserving 1 c. of the crumb
mixture, press remaining mixture on
bottom of ungreased 8-inch square
baking pan. Bake for 15 minutes or
until golden.
Meanwhile, combine all filling
ingredients in small bowl. Beat at low
speed until mixed well. Spread filling
over the crust. Sprinkle with reserved
crumb mixture. Return the pan to the
oven and bake for 40 minutes or until
filling is set. Cool and chill until ready
to cut into squares. Makes 16-20
squares or bars.
MATZAH BRITTLE

"This is a quick and easy Passover
treat. Its the kind of thing I would
make all year round. I make four
boxes at a time and one box just does-
n't make it anymore."
2 sticks margarine
1 c. dark brown sugar
6 oz. chopped walnuts or pecans (1
small bag)
1 box plain matzah
12 ounces (1 small bag) chocolate
chips, optional
Preheat oven to 350F. Grease a
cookie sheer and set aside. Melt mar-
garine and brown sugar in a saucepan
over medium hear. Once melted, add
chopped pecans or walnuts.
Break matzah into bite-sized pieces,
add them to the pan and stir well to
combine. Pour the mixture onto the
cookie sheet and bake for 10 minutes.
When completely cooled, break the
brittle into pieces.
Optional: Melt chocolate, in an
uncovered microwave-safe dish on
hi g h for 2 minutes. Stir until smooth.
If the chocolate is still lumpy, cook
again in 30-second increments, stir-
ring again until smooth. Use this to
dip the brittle into, or to drizzle with a
spoon over the brittle pieces.
