YOUR HOSTS:
TOMMY PERISTERIS AND RICK ROGOW

11-10; Saturday, 4-10.
It is a dedicated family business ...
with much pride to uphold ... Tony
does everything and is a par excellence
front-of-the-house greeter ... He opened
his restaurant after leaving the Stouffer's
chain following 17 years ... bartender
and manager at Top of the Flame in
Detroit, and Coach & Four in
Southfield's Northland Inn, and at
Eastland.
Ophelia Costanza, Tony's wife, cooks
and makes most of the desserts ... Son
Francesco's wife, Lori, is waitress, host-
ess, bookkeeper, etc. ... and Tony and
Ophelids daughter, Angela, has been a
day waitress for them since opening 16
years ago.
Costanza's Victorian room is not a big
place ... Just seating for about 80 ... The
free-standing restaurant is a pillar of
goodness, though, with a simple decor,
-
though elegant, with furniture, booths,
lamps, etc., from the Stouffer's
Victorian Room of years ago in
Eastland.
Back in Cosenza, Italy, Tony and
Pierino Guglielmetti grew up together
as teenagers ... Today, Pierino owns
Pierino Frozen Foods here, which sup-
plies all of Tony's pasta noodles.
There are many things to like at

Costanza's Victorian Room ... The mar-
tinis with olives stuffed with bleu
cheese, poured chilled from a glass shak-
er ... Delicious Victorian Scallops
sauteed in butter, garlic, lemon and
parsley ... chunky minestrone soup with
corn, carrots, beans and celery.. Alinosi
spumoni ... waitresses like Marjorie
Kershaw, so efficient, gracious and
knowledgeable ... The Saltimbocca
house specialty ... Calamari that is not
deep-fried, but deliciously sauteed in
parsley and garlic ... red drapes, red
leather booths, black wallpaper with red
flowers and green stems ... The excellent
choice Provimi veal, house favorites of
eight pasta dishes, including the popular
pasta di casa, spaghetti with the restau-
rant's highly-acclaimed meat sauce, etc.
Eastside customers aren't the only
ones who enjoy Costanza's Victorian
Room ... \X7estsiders, too, have told of
their wonderful dining experiences
there.
MICHIGAN CULINARY history in
the making ... was the recent "Dinner
with the Master Chefs" ... at MotorCity
Casino.
It doesn't get much better than this
... with some of the world's finest
chefs, including five certified master
chefs: Klaus Friedenreich, captain of
the 1980 U.S. Culinary Team; Rudy
