Grease and flour one large or two smaller loaf pans. Set aside while you make the batter. In a large mixing bowl, beat mar- garine until smooth. Slowly add the sugar and continue beating until fluffy. While beating, add eggs, one at a time. Add juice, peel and extract. Add dry ingredients and beat until and beat just until incorporated. Stir in the chips before spooning the bat- ter into the prepared pan(s). Place the cake in the oven and bake, uncovered, for 60 minutes, or until a tester inserted into the center comes out clean. Cool the cake for 20 minutes before removing from the pan. Wrap the cake in plastic wrap for up to three days. To serve, cut a very thin slice from the end of the cake. Then cut the remaining cake into 1- inch slices. Slice the cake on the diag- onal for triangles. Place a triangle on a dessert plate and top with a dollop of pie filling.
