hungry customers get that 18 oz.
"Billy Buster" sirloin ... along with
perhaps a side of button mushrooms
sauteed with brandy ... or the special
twice-baked potato stuffed with
cheese, bacon and scallions ... Bill's
char-grilled Grecian-style lamb chops
are also much requested.
A big feature is the tableside serving
at Billy's On The River ...
Chateaubriand for two, rack of lamb
for two and Caesar salad for two are
all brought on a cart and served to
mouth-watering customers.
It is always a pleasure to note when
rhe fine Provimi veal is prepared prop-
erly ... This excellent cut is too many
times shamefully abused by cooks
who don't know the difference
between ordinary cuts and choice
Provimi.
Slow-roasted prime rib of beef (18
oz. and 12 oz.) are heavy favorites,
also ... The roast beef hash, which is
quite regularly on the specials, is like
a page out of the old Berman's Chop
House book where sirloin tips were
used in the chopped sirloin ... In this
case, only the beef of Bill's fine prime
ribs is used in his delicious hash.
Other items on the daily dinner
specials might include broiled Atlantic
salmon, broiled Florida grouper,
broiled sea scallops, red trout, blue
marlin or the fresh Boston scrod
crusted with parmesan cheese ... Also
sauteed chicken breast in a raspberry
cream sauce, beef tenderloins tips
sauteed with mushrooms, red and
green peppers and served with lin-
guine, etc.
