Grilled Vegetable Pasta Salad

1 pound dry pasta shape, cooked al dente

according to package directions

1 large zucchini, cut in half lengthwise

1 eggplant, cut in 1/2-inch slices lengthwise

1 small onion, cut into wedges

2

carrots, sliced in half lengthwise

2 bell peppers, any color, cut in half lengthwise,

seeds removed

1/3 cup olive oil, for brushing vegetables

1 cup fresh chopped parsley or basil

1/2 cup balsamic vinegar, or to taste

Kosher salt and freshly ground black pepper to taste

1 cup fresh grated Parmesan or Asiago cheese .

Preheat grill to medium-high heat. Brush vegetables
with olive oil and grill them until just cooked through
and beginning to char, turning them once or twice dur-
ing grilling. Allow the vegetables to cool slightly and
then cut them into bite-sized pieces. Transfer the veg-
etables to a large howl and toss well with the parsley or
basil, vinegar, salt and pepper, and grated cheese.
Adjust seasonings to taste and serve at room tempera-
ture. Makes 15 or more servings.

first U-M home game, Ira Jaffe has
stocked his garage with beer,
booze, soft drinks, paper goods,
coolers, you name it. His laundry
room is loaded with candy, chips.

bowls, party tents and coffee mak-

going to buy to be ready for him

and wife Brenda to pick up at vari-
ous delis and food stores around
town.
It's the second game of the sea-
son. A home game. Michigan ver-
sus Rice. It's 3:15 a.m. on an
unusually brisk early September
Saturday and Jaffe is waking up.
He didn't work on Friday. Too

much to do. It's an afternoon game
and he's got to finish loading the
van with everything he needs.

tomatoes and onions. Fried chick-
en, corned beef, roast beef,
cheeses, chips, cookies, donuts,
salads, condiments and a popcorn
