Dawn Cleveland has been selected
as August, 2000 employee of the
month. Dawn also has the
distinction of being the first repeat
winner of the award. She earned it
in November of 1998.

"Dawn is very passionate about her work and the Jewish News,"
said publisher Arthur Horwitz. "She steps up and steps in to
help us do our jobs better. Coordinating the move of people,
furniture, computers, etc. is difficult under any set of
circumstances. She overcame many obstacles to make the move
a success while also maintaining the usual flow and quality of
her important day-to-day responsibilities."

on all that is going on in your life. This is also a great time to
take even better care of yourself mentally, spiritually, and physi-
- cally.
The delicious recipe below symbolizes the sweetness and healthy eating
for the New Year ahead! I2Shanah Tovah!

APPLE COBBI
4 cups peeled, thinly sliced Granny Smith apple
(about 4 large a.ppks)
2/3 cup sugar, divided
1/3 cup orange juice
1 Tbsp. cornstarch
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1 cup all-purpose flour
1 1/2 tsps. baking powder
1/4 tsp. salt
1/4 cup chilled butter or stick margarine, cut into small pieces
1/2 cup fat-free milk
2 tsps. sugar
Preheat oven to 375E Combine apple slices, 113 cup sugar, orange
juice and next 3 ingredients in a large bowl; toss gently to coat. Spoon
mixture into an 11 x 7-inch baking dish.
Combine remaining 1 /3 cup sugar, flour, baking powder, and salt in a
bowl; put in butter with a pastry blender or 2 knives until mixture resem-
bles coarse meal. Add milk; stir with a fork just until moist.
Drop dough into 8 mounds on top of apple mixture; sprinkle 2 tsps.
of sugar over dough. Bake at 375E for 35 minutes or until dumplings
are golden brown. Serve warm or at room temperature. Yield; 8 servings.

Alternate method: Cut the fillet into
individual pieces and grill, brushing
the glaze over each piece.

Oven method:

Brush the skin side of the fish with
glaze and place the salmon fillet on a
large cookie sheet that's been sprayed
with non-stick cooking spray.
Brush the top of the fillet with the
glaze and place the cookie sheet in the
hot oven. Bake for 15 minutes, glaz-
ing every 5 minutes or so, until the
fish is cooked through. Remove the
fish to a serving platter. Garnish with
the scallions and sesame seeds and

serve hot or at room temperature.
May be made a day ahead. Serves 12
or more.

MAKE-AHEAD PECAN
CHALLAH FRENCH TOAST

4 Tbsp. butter, melted
1 square loaf challah, cut into 12
thick slices, crusts need not be
removed
1 cup chopped pecans
6 large eggs
3 Tbsp. sugar
2 cups milk
2 Tbsp. rum
1 tsp. vanilla
1 tsp. ground cinnamon
