fresh gulf shrimp and
spring vegetables prepared in the tradi-
tional Tempura manner (dipped in a
light batter and deep-fried until golden
brown, served with tsuyu, a general term
for shoyu/mirin, sweetened rice wine-
based dips that are offered warm and
cold with various dishes from tempura
to cold noodles, to which you add finely
grated daikon, a long white radish, and
fresh ginger) ... and Salmon Teriyaki,
sashimi salmon prepared in the typical
Japanese style, with the salmon marinat-
ed in shoyu and wine or sake, then
grilled and served in this sauce.
Miso, the traditional Japanese soup
made from fermented soybean paste, is
delicious ... As is Shiro's osumashi, the
clear soy and bonita broth made with
fresh seafood and vegetables.
Noodles are second only to rice as
Japan's favorite staple ... There are many
types, like udon, thick white wheat flour
noodles ... and soba, buckwheat noodles,
essentially brown ... Japanese noodles are
served hot or cold, dry or in soup, and
sometimes fried ... Shiro has four types
of udon ... and three sobu selections.
The Shiro sushi and sashimi selec-
tions are among the finest to be had ...
very tasty, tender and delicate ... The
maki choices, too ... a style of sushi
where the rice and filling are rolled
inside a nori (dried seaweed) wrapper.
The wine list is long and good ... with
a choice selection of desired vintages.
For those who prefer other than
Japanese cuisine, Executive Chef
Tobin Harris also has dishes to favor
most everyone's palate.
Shiro is open six days a week ...
Lunch. Monday through Friday,
11:30-2:30; Saturdai.,-, noon-2:30 ...
Dinner, Monday through Thursday, 5-
10; Friday and Saturday, 5-10:30.
Shiro has brought back a gourmet
style of Japanese
that is decid-
edly many cuts above the norm.

Thompson, resident wine manager at
Merchant of Vino, Middlebelt and 12
Mile, in Farmington Hills ... who says
that the hit of this year's kosher Rosh
Hashanah crop, are the Napa Valley
wines of Hagafen Cellars.
"The 1998 Napa Valley Chardonnay
Reserve is excellent — citrus flavors
with oak accents, the result of barrel fer-
mentation and a special way of aging,"
