One Stop Kosher's Benji Silverstein
checks out his future space in the
current Hiller's Food Emporium.

"We've been successful," Silverstein
said. "But I've taken this store to the
limit. We were ready to take the store
to the next level."
The next level means expanding
into the new location's 15,000 square
feet and offering a full array of kosher
fruits and vegetables, meats, fish and a
deli counter. The store will continue
to sell kosher name-brand products,
but in a much larger variety.
Silverstein also will add general brand
items that are kosher, and he will have a
large freezer section. "And," Silverstein
said, "hopefully, a lot more ideas will
come. I hope to have a lot of new ways
to continually improve the store."
The partners will invest nearly $1
million in the new store. Silverstein
won't reveal the source of his financ-
ing, beyond saying that they "came up
with it on their own." When he
opened One Stop Kosher, a trademark
was the customer suggestion pad next
to each cash register.
"I took these suggestions very seri-
ously," Silverstein said. "I followed
through on them and made the effort
to get what the customers wanted."
At the new store, technology may help
replace the suggestion pads. Silverstein
plans to offer customers a shopper's card,
which will enable him to better track
their needs and buying trends.
"I want to perfect the store on a
daily, monthly and yearly basis — and
as the customers wish," Silverstein said.
Silverstein works long hours in the
store, and since both of his partners
are out of state, most of the daily
responsibility falls on his shoulders.
Still, he lauds Goldman for his com-
mitment to the business.
Despite working six days a week,
Silverstein finds time for his family.
He and wife Ilana have three young
children. Silverstein also studies with
his rabbi Five mornings a week before
opening the store.
