mushrooms wrapped in phyllo, tofu
kabobs, tofu meatballs, wild mushroom
chicken, Moroccan sandwich wrap with
couscous, Thai peanut noodles, Beef
Stroganoff, baked, stuffed and marinat-
ed tofu, etc.

Rachel Hayan, general manager and

Another major key in the Sperber's
Gourmet Delights setup is the new
executive chef, Scott Gabriel.
His talent lies in preparing world-
wide cuisine, gained from working with
culinary diverse workforces from various
countries.
Scott enjoys introducing internation-
al foods in kosher cooking while adher-
ing to the guidelines of Whole Foods,
using fresh vegetables and preparing
health-conscious dishes that are low fat,
low salt.
New concepts by Scott also include
east Indian and Caribbean cuisine ...
His experience with the east Indian
community in Chicago fits in well with
kosher dietary guidelines ... These foods
are marinated in a variety of spices and
generally follow halal specifications, so
they will lend themselves to kosher
palates ... Caribbean foods have a
Spanish twist with fresh fruits, and
appeal to local tastes.
Mexican dishes, too ... Scott's
Chicken Mole, roasted chicken with
marinated peppers, and beef enchiladas
\vith sweet onions, cumin and chills, are
among favorites.
Scott attended the Culinary Institute
of America at Hyde Park, N.Y. ...
