Preheat oven to 400F. Oil a two-quart
baking dish.
Grate or shred both potatoes and
onions in batches in a food processor.
Place the grated vegetables in a colan-
der placed over a bowl. Squeeze as
much liquid as you can from the veg-
etables in the strainer by pressing
down with a large spoon or your fist.
Remove the colander from the
bowl and pour off the liquid, reserv-
ing the thick white starch at the bot-
tom of the bowl. Add the potatoes
and onions to the starch and add the
remaining kugel ingredients. Bake for
45 minutes, cut into squares and
serve. Serves 8.

HENRIETTA'S FAMOUS MEAT-
BALLS
from Henrietta Weisberg, Bloomfield
Hills
1/2 cup vegetable oil-
5 cups chopped onions
9 large carrots cut into
1/4-inch dice
3 Tbsp. paprika
3 pounds lean ground beef
2 1/2 packages onion soup mix
1 1/2 Tbsp. garlic powder
1/2 cup matza meal
ground black pepper to taste

Heat oil in a large, heavy pot over
medium-high heat. Add onions and
saute until translucent. Add carrots
and continue to cook, stirring occa-
sionally, until the carrots and onions
are browned, crisp yet tender.
Add 1 1/2 tablespoons of the papri-
ka.
While onions and carrots are cook-
ing, combine the meat, onion soup
mix, garlic powder, matza meal and
pepper to taste (start with about 1/2
teaspoon).
Roll the beef into balls approximately
1 1 /2-inches in diameter. Add directly
to the pot with the onions and carrots
and continue cooking until the meat-
balls are almost cooked through.
At this point, add enough water to
the pot to cover the meatballs and add
the remaining 1 1/2-tablespoons
paprika. Bring the liquid to a boil,
lower the heat to medium and cook
for 20 minutes.
Separate the balls with a wooden
spoon if they're stuck together. Lower
the heat to low and continue to sim-
mer the meatballs slowly for at least 1
hour. Serve hot with plenty of challa
for dipping in the savory sauce. [11
