From Bernice Tender ...for that deli- cious Cream of Morel soup at the Golden Mushroom ... Here 'tis, thanks to the fine-dining restaurant ... Serves four ... 1/2 cup butter, 1/3 cup chopped onions, 1/2 cup flour, 1 bay leaf, 4 cups good and hot chicken broth, pinch of salt, pinch of nutmeg, 2 teaspoons butter, 1/2 pound fresh morel mushrooms chopped finely (domestic mush- rooms may be substituted), 1 egg yolk, 1/2 cup whipping cream ... Melt 112 cup butter in a one-quart, heavy-bottomed sauce pan (prefer- ably enameled or stainless steel), add onions and cook slowly until onions are transparent. Add the flour, stir over low heat for three minutes, and add the chicken broth and seasoning. Whip until all lumps are dissolved. Bring to boil, simmer slowly for 20 minutes, strain ... Heat a large skillet and add the but- ter and morels. Cook over medium heat until morels turn gray, but do not brown. Add to soup and simmer 10 minutes more. Just before serv- ing, heat soup up to the boiling point. In a separate, large bowl, mix yolk with cream. Start adding hot soup, whipping steadily with a wire whisk. When half of soup is added, pour it all back into the remaining soup in the saucepan. DO NOT BOIL (it will curdle). Serve imme- diately. PLANNING A TRIP to France? ...
