Recipes

For Jewish women, invested over the ages in nurturing their families, cooking
has been almost sacred, says Mollie Katzen. Here are two of her recipes with
a Jewish twist. The "Noodle Kugel," from The New Moosewood Cookbook,
provides options for making it lighter or richer; it takes about an hour to pre-
pare and serves 8. The "Israeli Eggplant Salad," from The New Enchanted
Broccoli Forest, keeps well and goes beautifully on crackers or in toasted
miniature picas; preparation time is 30 minutes and yields 4-6 servings.

1 1-lb. (or 12-oz.) package wide egg noodles
2 to 3 Tbs. butter or margarine (optional)
3 eggs (yolks can be omitted)
2 cups (1 lb.) cottage cheese (low-fat OK)
3/4 cup sour cream or yogurt
8 oz. cream cheese (low-fat OK) — optional
1 tsp. vanilla extract
1 to 2 tsp. cinnamon
114 to 1/2 cup sugar (to taste)
1/2 to 1 tsp. salt (to taste)
OPTIONAL ADDITIONS:
1 to 2 Tbs. lemon juice
1/2 cup (packed) raisins
1 tart apple, peeled and sliced
2 ripe peaches, peeled and sliced

1 cup bread crumbs and/or wheat germ
1 1/2 tsp. cinnamon

All meat, fowl and fish dinner
entrees include antipasto, soup,
salad, vegetable, potato and pasta.

1. Preheat oven to 375 degrees. Lightly grease a 9 x 13-inch baking pan.
2. Cook the noodles until about half-done. Drain, and toss with butter or mar-
garine (or simply rinse in cold water and drain again). Transfer to a large bowl.
3. Combine eggs, cottage cheese, sour cream or yogurt, cream cheese, vanilla,
cinnamon, sugar and salt in a blender or food processor and whip until
smooth. (Do this in several batches, if necessary) Stir this into the noodles,
along with whatever optional additions you choose. Transfer to the baking pan.
4. Combine the topping ingredients and sprinkle over the top. Bake uncov-
ered for about 40 minutes. Serve hot, warm or at room temperature.

1 tsp. salt
2 Tbs. olive oil
1 1 12 cups minced onion
2 medium cloves garlic, minced
water, as needed
fresh black pepper to taste
1 to 2 Tbs. red wine vinegar

1. Cut the eggplant into 1/2-inch cubes (peeling is optional). Place them in
a bowl and toss with 1/2 tsp. of the salt. Set aside.
2. Meanwhile, heat the oil in a large, deep skillet or Dutch oven. Add the
onion, and saute over moderate heat for 5 minutes. Add the garlic, and
saute for 5 minutes more.
3. Stir in eggplant and remaining salt. Cover and cook until the eggplant is
very tender (15-20 minutes), adding water as needed, to prevent sticking.
4. Remove from heat, and season to taste with black pepper and vinegan
Serve at room temperature or cold.
