1 T. chili powder
1/2 t. ground cayenne pepper
1/2 cup minced fresh cilantro
2 T. brown sugar
Prepare basting sauce: Whisk
together the basting sauce ingredients
and set aside. Heat grill. to medium
high. Thread chicken chunks on the
skewers, with pieces of bell pepper if
you wish, alternating with the chick-
en chunks. Brush one side of kabobs
with basting sauce and grill basted side
down until lightly charred, about 5
minutes. Brush unbasted side of the
kabobs with more basting sauce and
turn to grill other side. Grill kabobs
until other side is lightly charred.
Serve the kabobs hot or at room tem-
perature with remaining basting sauce
on the side. Serves 8.

GOOEY CAROB AND COFFEE
TRIANGLES

Carob is rich, dark and used instead
of chocolate, especially in Middle
Eastern cuisine. Carob grows in
large seed pods, like long, dark pea
pods. The seeds are ground into a
powder, then made into candy, just
like chocolate. The taste is nuttier
and, in general, is not as sweetened
as chocolate.. Use carob in place of
chocolate in recipes or try this
bro - wnie like cake, served warm with
carob syrup or vanilla ice cream.
This cake can also be baked in an 8
x 8-inch pan and served, cooled and
cut into squares.
1/3 cup canola or vegetable oil
3/4 cup brown rice syrup,
available at health food stores
1/2 cup carob powder, available
at health food stores
2/3 cup strong coffee
1 tsp. vanilla extract
2/3 cup chopped pecans
2 cups flour
1 tsp. salt .
1 cup carob chips, available
at health food stores
Fresh whipped cream or vanilla
ice cream, optional.
Preheat oven to 350F. Spray a 9-inch
round pie dish with non-stick cooking
spray. Combine all ingredients except
flour, salt and carob chips in a large
bowl and beat until creamy. Add salt
and flour and beat until the flour is just
incorporated. Stir in the carob chips.
Spread the mixture in pie dish or
pan and bake for 25 minutes. Do not
overbake — this is a chewy recipe. Let
cool slightly and cut the cake into 8-
12 wedges, as desired. Seve with ice
cream or with fresh whipped cream.
