Add the dry ingredients to the egg
mixture and beat until mixed. The
dough will be sticky. Remove the
dough from the mixer, divide it into
three portions, wrap each portion in
plastic wrap and chill for 1 hour.
Preheat the oven to 350F. Roll one
portion of the dough on a lightly
floured pastry board to about 1/6th
inch. Cut the dough into several cir-
cles with a 3-inch round cookie cutter.
Place about a teaspoon of your
favorite filling in the center of the
round and pinch the dough together
to form a hamantashen shape (pinch
it well or the hamantashen will open
during baking). The center filling will
be exposed.
Repeat with remaining dough and
dough scraps. Bake on a parchment-
lined or lightly greased cookie sheet
until the cookies are golden, about
15-20 minutes. Makes 3 to 4 dozen
hamantashen.

HAMAN'S EARS
There are several pastries known as
Haman's Ears. Some are small and
deep-fried and others are cooked in a
honeyed syrup. This is another version
that is very much like rugalach.
1 cup butter or margarine, softened
1 cup cream cheese, softened
3 T. sugar
2 cups flour
1 cup ground nuts (walnuts,
almonds or pecans)
1/2 cup brown sugar
2 t. cinnamon
1 egg white beaten with 1 T. water,
for brushing on the pastry
1/4 cup sugar, for sprinkling
on the pastry
Cream butter, cream cheese and
sugar in a large bowl. Add flour and
gather the dough into a ball. Cut the
ball in half and wrap each half in plastic
wrap and chill for 30 minutes. Combine
the nuts, brown sugar and cinnamon in
a small bowl and set aside.
Preheat oven to 375F. On a lightly
floured board with a floured rolling
pin, roll one half of the dough (one
wrapped ball) to about 1/8th-inch
thickness. Cut a large circle from the
dough (you may use a dinner plate as
a guide). Cut the dough — like a
pizza — into about 16 triangles.
Brush on the egg-white mixture over
the dough. Sprinkle a third of the nut
mixture over the dough.
Starting from the widest edge of
each triangle, roll the pastry over itself
to make a "horn" or traditional
rugalach shape (some of the filling will
fall out — that's okay). Place the fin-

ished horn on a parchment-lined or
lightly greased cookie sheet and bend
the end slightly to make the pastries
rounded (like ears).
Repeat with remaining dough and
filling, using the scraps to roll out one
last circle of dough. Brush the remain-
ing egg mixture over the individual
horns and sprinkle them with a small
amount of sugar. Bake for 15-20 min-
utes, until the "ears" are golden:
Makes 3 dozen or more "ears".

PEANUT BUTTER FILLING
6 ounces cream cheese, softened
1/2 cup smooth peanut butter
1/3 cup brown sugar
1 large egg
2 T. cornstarch
Beat all the ingredients in a medi-
um bowl until smooth.

APPLE FILLING
This filling is a variation of one I
found in an old Gourmet magazine.
It's easy to make and uses dried cher-
ries, so there's a Michigan twist. You
can purchase apple butter in the jelly
and jam section of the supermarket or
specialty food store.
1/2 cup apple butter
1/4 cup chopped dried cherries
or cranberries
1/4 cup chopped walnuts or pecans
Stir together filling ingredients in a
small bowl until well mixed. Makes
3/4 cup.

CREAM CHEESE FILLING
1 cup cream cheese, softened
1/4 cup sugar
1 large egg yolk
1 t. vanilla extract
2 T. all-purpose flour
In a bowl, beat together all the
ingredients until the mixture is
smooth. Cover and chill until ready to
use.

Some poppy seed fillings require
ground poppy seeds. This is a chunki-
er version that uses whole seeds.
2 T. butter
1/2 cup poppy seeds
2 T. honey
2 T. sugar
1/4 cup chopped raisins
1 T. lemon juice
Combine butter and poppy seeds
in a small pan and cook, stirring until
the butter is melted. Add the honey,
sugar, raisins and lemon juice and
cook for 2 minutes more, stirring. The
mixture will thicken as it cools. O
