Louis Lanza, executive chef-owner of
Josie's Restaurant & Juice Bar in
New York, and Lanza responded
with a four-course, meatless feast
culled from his soon-to-be-released
cookbook, Totally Dairy-Free
Cooking.
"He has replaced liver pate with a
pate of lentils with toasted walnuts
and bay leaves on endive. And
chicken soup has given way to chick
pea miso soup. Also included in the
feast is a salad of organic baby
greens, heirloom tomatoes and toast-
ed soy nuts.
"In Lanza's world, a steak entree
has evolved into seared tofu cutlets
in an orange chipotle glaze with
mushrooms, butternut squash and
wheatberries.
"And for dessert? Instead of ice
cream, Lanza serves up a sundae of
'rice cream' with sliced bananas and
caramelized cane sugar."
