1/2 cup shredded red cabbage
2 thin slices Bermuda or red onion
1/4 red pepper, sliced thin
1/2 medium carrot, shaved with a
vegetable peeler
6 slices cucumber

Dressing:
Olive oil to taste
Balsamic vinegar to taste
Fresh ground pepper to taste
Arrange all salad ingredients on
individual salad plates. Drizzle with
olive oil and Balsamic vinegar and
fresh ground pepper.

ACCORDION FAN
GARLIC-ROASTED REDSKINS

2 large redskin potatoes
1 small clove garlic
2 T. olive oil
salt to taste
Cut a thin slice off the bottom of the
potatoes to make a flat surface.
Holding the potato with one
hand, use a sharp knife to slice it into
very thin slices, but not all the way
through (a skewer threaded length-
wise along the bottom of the potato
makes a great "stopper" — remove
the skewer before baking). Place the
potatoes in a baking dish.
Meanwhile, process the garlic, olive
oil and a small amount of salt in a
mini-chopping machine until smooth.
Brush the potatoes with garlic mixture
and place the baking dish in a preheat-
ed 400F. oven. After 25 minutes, brush
the mixture over the potatoes again.
Let bake for 20-30 minutes more.
When ready to serve, place the pota-

slightly with your hand or a spatula and
shape the slices into a "fan." Serves 2. 1-1
