CHUNKY CARDAMOM-SPICED
APPLESAUCE
This applesauce is subtly perfumed with
cardamom, for an unusual accent.
4 small golden delicious apples,
peeled, cored, and coarsely
chopped
1/4 t. cinnamon
1/4 t. ground cardamom
Place apples in a small saucepan and
add just barely enough water to cover
the bottom of the pan. Cover and bring
to a boil. Uncover and cook, stirring,
until mixture cooks down but is still
chunky. Remove from heat and add
spices. Makes about 1 1/2 cups.
CRANBERRY JEWEL
MOUSSECAKE
Silky smooth and subtly sweet, this
dessert has the ethereal texture of a light
and creamy mousse. The bright crimson
cranberry topping makes for a dazzling
presentation. If you serve this without
mentioning the tofu, I guarantee you'll
be asked for the recipe.
For crust:
8 graham crackers, finely crushed
1 T. canola oil
Preheat oven to 325F. Lightly spray
10 inch non-stick heavy-gauge spring-
form pan with cooking oil. Mix all
crust ingredients together thoroughly
and press firmly into pan. Bake 4-5
minutes Cool on rack.
For filling:
25 oz. tofu, "light" version
if possible
1/3 cup fresh lemon juice
grated rind from 2 lemons
4 egg whites
3 T. cornstarch
2/3 - 3/4 cup sugar, to taste
Raise oven temperature to 350F.
Mix all ingredients together in
blender at high speed until thorough-
ly combined. You may have to careful-
ly scrape down sides of blender with a
rubber spatula while the motor is run-
ning. Slowly pour filling into cooled
crust. Bake at 350F. for 20-25 min-
utes. Pie will not look set in middle.
Cool on rack.
For cranberry topping:
2 1/2 cups fresh cranberries
6 T. fresh lemon juice
1 cup sugar
Wash and pick over cranberries for
stems, then coarsely chop. Bring fruit
and juice to a boil in small saucepan.
Simmer for 2-3 minutes, stirring, just
until berries pop and disintegrate. Do
