THE ONE & ONLY

seems too hot to your taste, add more
honey. If you'd like it spicier, shake in
a few drops of Tabasco to your person-
al taste.
You will probably like to add
another teaspoon of oregano at this
time. Now add four large cans of
tomato paste to thicken the sauce and
a teaspoon of soy sauce.
"Sometimes for a little different
taste, I'll toss in a couple or several
Italian sausages cut in two-inch
lengths, but this is not necessary.
"Let it cook for another hour and a
half over low heat and stir it from
time to time to get the stuff moving
around and also to sneak a taste or
two. Part of the joy of this sauce is
tasting it at various times and letting
your taste buds pick out the various
herbs.
"Serve it over any of your favorite
pasta and don't feel compelled to use
it over spaghetti alone."

GOOD WAITRESS DEPT. ...

Karen "Curly" Reid, evenings at Beau
Jack's, Maple Road, west of Telegraph
... a stalwart of efficiency and person-
ality since it opened in 1977 ... Before
that, "Curly" was with Gary and his
late dad, Jack Cochran, at their
Westerner Beef Buffet.
By the way, those instruments you
see at the Beau Jack's piano bar, aren't
for a band ... They're all also played by
piano tingler John Perry, Thursdays
through Saturdays.
CONGRATS ... to birthday cele-
brants on the same evening recently at
Excalibur Restaurant on Franklin
Road ... Paula Goldberg, Paula
Wilson, Peter Ansara, Robert Wesely
and Robert Sherman.
OPERA IS NOW at La Bistecca
Italian Grill ... this Wednesday, 7 p.m.
... with arias by Aaron Caruso, tenor;
accompanied by Tony Dannon, accor-
dionist/pianist ... Dec. 15 will also
include guest artist Gina D'Allessio,
soprano ... La Bistecca is on
Plymouth, between Newburgh and
Haggerty.
DON'T KNOW if it is an over-
sight or a trap ... but drivers on
Orchard Lake Road in West
Bloomfield beware ... Between 14
Mile and Maple roads on the west
side, a speed limit sign says "25" ... A
very short distance later it is "45" ...
and then in a wink, it's back to "25".
PLANS ALREADY have begun for
Temple Kol Ami's second annual
Ultimate Chicken Soup Contest ...
Entree deadline is Jan. 28 ... with the
top 10 recipes chosen by the judges
tasted Feb. 25 in the cook-off finals at
Kol Ami.
