PRALINES, WALNUTS OR PECANS 1/2 cup sugar 1/4 cup water 2 cups walnut or pecan halves, roasted Combine the sugar and water in a saucepan and stir over low heat to dissolve the sugar. Bring to a boil and boil until deep golden, about 8 min- utes. Stir the nuts into the mixture and spread on a parchment or wax paper-lined cookie sheet to cool. Break or chop into small pieces to serve. CRUMB TOPPING 1/2 cup flour 1/2 cup (1 stick) butter or margarine, softened 1/4 cup brown sugar 1/2 cup walnuts halves 1 t. ground cinnamon Combine all ingredients in the bowl of a food processor and pulse for 20 seconds until combined. Spread the topping on a cookie sheet and bake at 350F. for 15 minutes until golden. Let cool completely and crumble with your fingers. CRANBERRY COMPOTE 3 cups fresh cranberries 1 cup brown sugar 1/2 cup sugar 1 T. fresh lemon juice 1 T. grated lemon or orange peel Combine all ingredients in a saucepan. Simmer, stirring occasional- ly, over medium heat until cranberries burst and mixture thickens, about 12 minutes. Cool to room temperature. Serve with pie. MAPLE SYRUP WHIPPED CREAM 2 cups (1 pint) chilled whippin cream 1/3 cup chilled pure maple syrup In a chilled, large, dry bowl with chilled beaters, beat cream until soft peaks form.
