She received a lot of correspon- dence from readers, asking if she was planning to extend the concept of healthy yet tasty Jewish cooking year round. The result is the newly released Festivals of Lite Kosher Cookbook (Pelican; $23). The author's latest effort offers low-fat and low-cholesterol recipes for all the traditional dishes associat- ed with Jewish holidays, many of which can be utilized for other occa- sions as well. For example, Ashkanazi-Hankin's "Roasted Turkey Tzimmes," with only 4 grams of total fat, would make a fine substitute for the tradi- tional Thanksgiving turkey and stuff- ing. We've all heard about the bene- fits of eating broccoli. Why not try "Broccoli Latkes" this Chanukah? With only 3 grams of total fat and 8 grams of carbohydrates, even those on low-carb diets can partake in the holiday feasting.
