In 1996's Passover Lite Kosher
Cookbook (Pelican Publishing Co.),
first-time author Gail Ashkanazi-
Hankin created a recipe collection
which removed much of the fat and

She received a lot of correspon-

planning to extend the concept of
healthy yet tasty Jewish cooking year

released Festivals of Lite Kosher
Cookbook (Pelican; $23).
The author's latest effort offers
low-fat and low-cholesterol recipes

for all the traditional dishes associat-

"Broccoli Latkes" this Chanukah?
With only 3 grams of total fat and 8
grams of carbohydrates, even those
on low-carb diets can partake in the
holiday feasting.
The author provides menus, "lite
and healthy" tips to make low-fat
kosher cooking even healthier and
time and money-saving tips to make
food preparation easy and economi-
