1/3 cup mayonnaise 1 cup minced onion 2 cups shredded carrots 2 eggs, lightly beaten 1 T. parsley flakes 1 t. kosher salt 1/2 t. fresh ground pepper 1-2 t. sugar (optional) Preheat oven to 325F degrees. Line 2 small or 1 large loaf pan(s) with aluminum foil and spray the foil with non-stick cooking spray. Set aside. Combine all ingredients in the bowl of a food processor and pulse process until well combined but not a paste. (Alternate recipe: combine ingredients in a large bowl and with your hands, mash the ingredients together until smooth). Spread the mixture in the prepared pan(s) and bake for 45-60 minutes, until the mixture is set. Remove from oven, cover with plastic wrap and chill for 2 or more hours. When ready to serve, turn pan over on a clean cutting board and carefully peel away the foil. Cut into 8-12 slices and serve with cooked carrots and horseradish. Makes 8-12 servings. HERBED MATZA BALLS 1 recipe matza ball mix 1/2 shredded carrot 1 T. dried dillweed 2 T. fresh lemon juice 1/2 t. fresh ground black pepper Make matza ball recipe according to package instructions, adding 1 egg to the mix. Before chilling, stir in remaining ingredients. Complete recipe as directed. NO FUSS CHICKEN SOUP This is almost as good as bubbie's. 4 14-ounce cans chicken broth 4 cups water 4 chicken-flavored bouillon cubes, or equivalent 1 T. vegetable oil 2 carrots, peeled and sliced into coins 1 celery stalk, cut into chunks 1 medium onion, with skin, top and bottom removed 1/4 cup dill sprigs, tied together with cotton string Salt and pepper to taste Combine all ingredients in a large soup pot over high heat. Bring the soup to a boil, reduce heat and sim- mer for 30-40 minutes. Strain the liquid, reserving the car- rot slices for garnish. Serve hot with matza balls. Serves 8. APPLE, CARROT AND SWEET POTATO TZIMMES Apple pie filling and prepared vegeta- bles make this tzimmes a snap. 2 14-ounce cans apple pie filling 2 cans sweet potatoes, drained 2 10-ounce packages frozen carrots, defrosted 1 cup yellow raisins, cranberries or 2 cups pitted prunes 1/2 cup orange juice 2 T. grated orange peel 1 t. kosher salt or to taste Preheat oven to 350F degrees. Spray a large baking dish with non- stick cooking spray. Combine all ingredients in a large bowl and spoon into the prepared dish. Cover tightly with aluminum foil and bake for 1 hour until the mixture is bubbly. Makes 12 -16 servings. NOT-FROM-SCRATCH LEMON POPPY SEED CAKE 1 package yellow cake mix 1 package instant lemon pudding mix 4 large eggs 1 cup sour cream 2 T. rum or 1/2 cup fresh lemon juice 1/2 cup melted butter or margarine 1/2 cup poppy seeds Preheat oven to 350F degrees. Spray a 12-cup bundt pan well with non-stick cooking spray. Combine all ingredients in a large bowl and beat on medium speed for 5 minutes. Pour the mixture into the prepared pan and bake for 45 minutes or until a toothpick inserted into the cake comes out clean. Let cool completely and remove from the pan. Dust with powdered sugar.
