batter into a 9 x 13-inch baking pan, or
equivalent, that's been sprayed with
non-stick cooking spray, or into a 9-
inch spring-form pan that's been
sprayed with non-stick cooking spray.
Arrange plums over the batter,
pressing in slightly. Sprinkle the
kuchen with cinnamon and sugar.
Place the kuchen in the center of
the oven and bake 60-70 minutes, or
until the top is golden and the batter
is set. Cool and serve warm or at
room temperature, cut into squares.
Serves 12-16, heartily.

1 cup sliced almonds
1 cup sugar
2 t. ground cinnamon
1/2 t. ground mace
3 T. flour
3-4 pounds large plums, pitted
and quartered
1/2 cup apricot preserves or jam
Pre-heat to 375 degrees F. To make c,
filling, combine all filling ingredients
in a large bowl and set aside.
Line a pastry sheet with parchment
paper. Place 1 puff pastry sheet on a
clean, dry counter and sprinkle with a
small amount of flour. Roll the pastry
sheet slightly to make larger. Cut puff
pastry into six pieces.
Brush the edges of each of the pas- c'
try squares with the beaten egg.
Spoon 1/12th of the filling onto a-
corner of each of the squares. Fold the
pastry diagonally over the filling and
press the edges well to make a filled
triangle. Place the turnover on a
cookie sheet lined with parchment or
sprayed with non-stick cooking spray.
Repeat with remaining squares and
with second sheet of pastry. Just
before baking, brush beaten egg over
the pastry triangles and, using a sharp
knife, cut one or two slits into the
tops of the pastries. Bake until golden
and puffy, about 30-40 minutes. Let
cool and serve warm or at room tem-
perature with fresh whipped cream or
ice cream. Makes 12 turnovers.
