Great Harvest Bread
Co. in Birmingham
offers these summer
bread spreads for
healthy, on-the-run
meals:
Pomodoro Sauce — Cook
1/4 cup chopped onion and one
minced garlic clove in 1/4 cup olive oil
over medium heat, 3 minutes. Add 3
large diced tomatoes and heat through.
Stir in 1/2 cup chopped basil, 1/2 tsp.
salt and 1/8 tsp. pepper. Makes 3 cups.
Serve atop grilled Focaccia with shred-
ded gouda, provolone and smoked
mozzarella or layer with sauteed porto-
bello mushrooms and parmesan cheese
and serve on slices of Michigan
Herb bread.
Red Bell Pepper Spread — Cook
two cored, seeded and chopped red
bell peppers with two thinly sliced
garlic cloves and 1/4 tsp. salt in 2 T
olive oil, about 10 minutes. Stir in 1
tsp. salt and 1/2 tsp. pepper. Makes
3/4 cup.
Spread on Montana Wheat
bread with smoked turkey and
Swiss cheese. Serve with veggie
burgers on Green Chile Cheese
bread, and add avocado and fresh
tomato slices. Combine grilled
chicken and shredded parmesan
with the pepper spread and serve
on Asiago Pesto bread.
