YOU'VE PROBABLY heard of people eating at someone's home and telling the hostess, "You should open a restaurant" \X./ell, just the opposite happened to Leeann Chin, author, chef, restaurateur, caterer, etc. She was teaching classes and cater- ing at homes and halls in Minneapolis when some folks told her not to go into the restaurant business ... Too much competition, they said. That was years ago ... and today the pleasant Leeann has 47 restau- rants that have grown into a highly popular. and well-respected chain that's still bopine- places. Customers go up to get their food from counters and ear at tables ... Her concept is a rarity ... The excel- lent dishes, all her own recipes, are freshly-made on the premises ... not frozen and brought in from a central commissary to be reheated at the restaurant ... In too many cases, this is done at chains. The big news is that Leeann Chin's next step may be to open in a north- west suburb of Detroit that is in the heart of the Jewish sector. In the meantime, she has opened a spot in Troy ... on E. Big Beaver, just west of john R, in the Troy Sports Center complex ... with seating for about 65 ... and wonderful food ... her highly-received service idea is drawing a lot of well-deserved raves. Lunchers appreciate being able ro eat quickly and get back to work ... with lunches and dinners far from being mediocre fast food ... And remember, nothing is frozen. At all openings and for a short time afterward, Leeann herself is at the restaurant making certain her food is prepared correctly, getting to know people and taking part in communal activities ... putting on cooking shows, being at food fairs, etc. Quite a difference from 1956 when she came to the United States from Canton, China ... Leeann speaks English very well now, without any trace of an accent, and cooking and sewing are no longer her only skills.
