For people with Honig's obser-
vance level, the issue is a no-brainer.
But for those who are comfortable
with less-observant standards, the
choice between a non-kosher caterer
and a kosher caterer is more difficult.
In the past, people whose standards
permitted based their decision on the
selection of foods. After all, kosher
food at that time meant traditional
Jewish cuisine like roasted chicken,
matzah ball soup and kugel. Non-
kosher food, on the other hand, meant
everything from pizza to lo mein.
Relatively recent changes in kosher
foods, including the introduction of
gourmet kosher pizza shops and
frozen kosher Chinese entrees, has led
to a wider selection, according to Paul
Kohn of Quality Kosher Catering,
based at Congregation Shaarey
Zedek. He points to the prevalence of
once-exotic mushrooms like porcini
and.portabella and the non-tradition-
al lightly smoked, honey-coated
salmon he uses in appetizers.
"With the worldwide availability of
foods, the variety we can offer is no
longer an issue," Kohn said.
"Traditional foods are still great, but
kosher today is what you want it to be."
