ish sold during Passover in
„Michigan.
Ken Michaels of Greenfield
Noodles in Detroit, the distributor of
Streit's Matzah products, Mother's
and Rokeach gefilte fish, said Passover
is definitely the big time for matzah
and gefilte fish. During the season, he
distributes about 600 30-pound cases
of matzah, 500 cases of Mother's
_gefilte fish and 200 cases of Rokeach
canned gefilte fish. A non-Passover
week might net 10 cases each of
matzah and gefilte fish.
He added that Passover is not the
only big fish holiday. "It is Passover
and Rosh Hashanah when we sell
the gefilte fish," he said.
Restaurants do about equal
amounts of matzah business during
the off-season. "You go into the
Golden Mushroom or Excalibur
and they will have matzah in their
bread baskets," he said.
In the end, despite all of the has-
sles and hurdles, none of the grocery
stores said they could do without
Passover. In part, it is a profitable
time; but all said it is a service to
their Jewish customers.
"We are sensitive to the needs of
the Jewish community," Farmer
Jack's Coleman said. "This is part
of doing business. It is just good
business." fl
