Others worry about how to make lunch- es and desserts interesting without all the ingredients that seem s000000 much more attractive now that we can't have them. I never stress out over that kind of stuff. It's a week's worth of bagel-less breakfasts that gives me fits. This year I have a plan. How will I prepare delicious, nutritious and fun breakfasts that don't take five hours and use a dozen eggs? Simple. I'll use the following recipes I've been collecting since last year. Whisk in matzo meal, cake meal, sour cream, cottage cheese and salt. Stir in banana. Batter will be very thick. Pour oil onto griddle or large skillet. Heat over moderate heat until hot. Make 3-inch pancakes using about 1/4 cup batter for each. Cook until a few bubbles appear on top, and underside is gold- en, about 3 minutes. Turn and brown on the other side, about 2 minutes. Serve with butter, syrup, jam or any- thing you like on your pancakes. Yield: 10 pancakes. PASSOVER CUPCAKE BLINTZES 1 lb. creamed cottage cheese 2 oz. melted butter 3/4 c. sugar 1/2 c. cake meal 4 beaten eggs (can use egg substitute) Mix together all the ingredients except eggs. Then add the eggs. Grease muf- fin tins or use paper muffin cups. Fill tins 3/4 full; bake at 350 degrees for 40-45 minutes if using large muffin tins. Smaller muffin tins will require less time. Serve.with sour cream, jelly or fresh sliced strawber- ries. PASSOVER WAFFLES 2 eggs separated 3T. oil 1/2 c. buttermilk 1/4 c. sugar 1/3 c. matzah cake meal 1/8 c. potato starch Beat egg whites with an electric beater until soft peaks form. Gradually add sugar and continue beating until stiff peaks form. Using the same beaters but another bowl beat the egg yolks with the oil until light, about 5 minutes. Add milk, continue beating. Gradually add the dry ingredients. Batter will be thick. Fold in egg whites in two batches. Pour batter into prepared waffle iron. This batter can also be used for griddle pancakes. Yield: 4 waffles. APPLE BOYSENBERRY CAKE (This brunch cake is cut and served like a regular cake, but its texture is that of a pudding. Begin the cake a day ahead before you plan to serve.) 2 c. water - 2 c. frozen unsweetened boysenberries or blackberries (about 8 ounces) 1 c. sugar 1/4 c. Passover brandy 1 T. fresh lemon juice 4 1/2 pounds Golden Delicious apples (about 9 medium-large) peeled, cored, each cut into 12 wedges 1 13-ounce Passover sponge cake 2 c. sliced almonds, toasted 12 soft almond macaroons, finely crumbled (about 1 1/2 cups) 6 T. (3/4 stick) unsalted margarine, melted, cooled 1/2 c. apricot preserves 2 T. Passover brandy or sweet wine 1 1/2 c. chilled whipping cream 3 T. sugar C= /
