To replace crumbly matzah sandwiches, Zeidler suggests popover rolls flavored with onion and rosemary, filled with leftover turkey or egg salad. Veal breast with vegetable stuffing and candied sweet potatoes are among the other Passover recipes, but again, many of the other dishes are perfect for Passover: fennel "caviar" instead of chopped liver; romaine lettuce soup, "30-Minute Chicken for a Crowd." Zeidler offers a more extensive Passover section in The Gourmet Jewish Cook (Morrow; $15), a paperback reprint of her classic, first published in 1988. Sample any of the nine types of charoset; create seder feasts from California, Italy and Persia or try the brunch, buffet lunch and dessert recipes. Zeidler also provides a step-by-step plan for Mexican, Chinese, French, Italian, Brazilian, Moroccan, Israeli and Scandinavian menus. Don't overlook two other reprints of classic cookbooks. Joan Nathan's Jewish Cooking in America (Knopf; 835) has been expanded with 35 new recipes as a companion to her new public television series. In addition to the fascinating Passover section, new chametz-free recipes feature horseradish-crusted bass with borscht broth; spicy chickens from Cuba, Ethiopia and Persia; and matzah brei with caramelized onions. In The New Complete International Jewish Cookbook (Robson Books, available in the U.S. through Parkwest Publishing; $24.95), Evelyn Rose gathers over 1,100 recipes for all occasions. Rose, the food columnist for three decades for the United Kingdom's largest Jewish news- paper, the Jewish Chronicle, offers a variety of Passover ideas and menus, as well as alternative dishes for vegetari- ans, diabetics — even coeliacs, people who cannot tolerate gluten, which is also found in matzah.
