3 large eggs
1/4 t. salt
1 1/2 - 2 cups flour
Vegetable oil for frying
Confectioners' sugar, for garnish
Combine eggs and salt and beat
lightly to combine. Add 1 1/2 cups of
flour and stir until a soft dough is
formed. Knead the dough for 8-10
minutes, adding more flour as needed
if the dough is too sticky. The dough
must hold together enough to roll
with a rolling pin. Let the dough rest
for 10 minutes before rolling.
Roll the dough to 1/4-inch thick-
ness on a floured surface. Cut the
dough into small triangles or into 2-
inch by 4-inch strips. Pinch in the
center to create 2 attached triangles.
Heat about 2 inches of oil in a
large saucepan or skillet until very
hot. Test the temperature by droppin g
a small piece of dough into the oil.
Deep fry the "ears," a few at a time,
until they are golden. Remove from
the oil with a slotted spoon and drain
well on paper towels. Allow to cool
and sprinkle with confectioners' sugar
just before packing or serving.
Servings vary, depending on the size
of the ears.

Sweet Baked Nuts
This makes a big batch — perfect
for packing and giving.
3 cups granulated sugar
1/2 cup water
2 t. vanilla extract
2 T. ground cinnamon
1 t. ground nutmeg
3-4 pounds mixed, unsalted nuts,
such as walnuts, almonds, pecans or
cashews or a combination.
Preheat oven to 350° F. Line 4
cookie sheers with parchment paper.
Toast the nuts by spreading them in
the pans and baking for about 20
minutes, turning every 5 minutes,
until they are browned and crunchy.
Heat sugar, water and vanilla in a
saucepan over medium-high heat,
until the sugar is dissolved. Add the
cinnamon and nutmeg. Cook 3 min-
utes more, stirring. Remove from heat
and set aside.
Place nuts in a large bowl. Pour
the melted sugar mixture over the
nuts and toss to coat well. Spread the
nuts again on the cookie sheets and
bake for another 20 minutes, turning
halfway through the baking time.
Remove from oven and let cool com-
pletely, before removing the glazed
nuts from the pans and breaking
them up to serve or pack. Makes 4
pounds of nuts.
