We still need a liquor license and to be open for lunch," he says. Both are expected to happen soon. Kosher cooking is a learning expe- rience for Wood, a Methodist who married a Catholic. "Our staff is 99 percent non-Jewish. During training, their concerns were that they didn't know anything about Jewish food or what's kosher. "I said, 'You don't have to. You just sell and serve the food as you would anywhere else.'" But there were a few things foreign to many staffers: washing stations and "benching" (grace after meals) for observant Jewish customers. The staff knows not to interrupt customers when their prayer books are open. What surprised Wood the most was how diligent the supervision is about making sure the foods are kosher. There are two mashgichim (supervisors) from the Council of Orthodox Rabbis of Greater Detroit who are responsible for making sure everything is kosher. "I didn't realize the amount of time that is spent look- ing at the fruits and vegetables to make sure there are no insects," says Wood. Garry Arai, a waiter, says he hasn't had a problem learning about kosher food. "If I can't answer something I ask Mr. Kohn or the mashgiach," he says. The only unanswered question is whether or not La Difference will suc- ceed. So far, Kohn says he feels reaches (pride). "This baby of mine turned out better than I had hoped for."
