Havana Black Bean Chili
A ZOUP! favorite, this soup is slightly
adapted from the original ZOUP!
recipe.
2 T. vegetable oil
1 cup chopped onions
2 cloves of garlic, minced
2 2/3 cup black beans
1 cup fully cooked smoked turkey,
finely chopped
3 cups rich beef stock
3 cups water
1/4 cup dark rum
1 1/2 t. ground cumin
1 1/2 t. dried oregano
1 cup chopped bell pepper
1 cup chopped tomato
Salt and pepper to taste.
Chopped hard boiled eggs for gar-
nish
Chopped onions for garnish
Heat oil in a large pot over medium
high heat. Add onion and garlic and
cook, stirring occasionally, until onion
is tender, about 10 minutes. Stir in
remaining ingredients except garnish
eggs and onion. Bring to a boil.
Reduce heat and simmer, covered, for
about 2 hours, or until the beans are
tender, stirring occasionally. Add salt
and pepper to taste. Serve soup with
chopped eggs and onions. Serves 8-10. I 1

MUSHROOM BARLEY SOUP
The next best thing to chicken soup.
1/4 cup (1/2 stick) butter or mar-
garine
2 pounds mushrooms, button, wild
or mixed varieties, sliced
2 cups carrots, diced
1 1/2 cup celery, diced
1 cup chopped onion
2/3 cup barley
2 T. all purpose flour
10 cups canned vegetable broth or
water and 4 chicken-flavored bouil-
lon
cubes
1/2 cup chopped fresh parsley or
1/4 cup dried parsley
1 cup frozen peas, thawed
Salt and pepper to taste
Melt butter in heavy, large soup pot
on medium-high heat. Add mush-
rooms, carrots, celery, onion and
cook, stirring occasionally, until
vegetables are softened, about 15 min-
utes. Add flour and cook, stirring,
about 5 minutes more. Stir in broth
or water and bouillon cubes and pars-
ley and bring the soup to a boil.
Reduce heat and simmer the soup
until the barley is softened and the
soup thickened, about 30 minutes.
Stir in peas and season with salt and
pepper to taste. Makes 8 servings.
