CAPPUCCINO MENDELBROT/BISCOTTI 2c. flour 1 c. sugar 1/2 t. baking soda 1/2 t. baking powder 1/2 t. salt 1/2 t. cinnamon 1/2 t. cloves, ground 1/4 c. plus 1 T. espresso or strong- brewed coffee, cold 1 T. plus 1 t milk or nondairy creamer 1 egg yolk 1 t vanilla 3/4 c. hazelnuts; toasted, chopped coarse 1/2 c. chocolate chips, semisweet Preheat oven to 350° F. In bowl of an electric mixer, combine flour, sugar, bak ing soda, baking powder, salt, cinnamon and cloves until mixed well. In a small bowl, whisk together espresso, milk, yolk and vanilla. Add this mixture to flour mixture, beating until dough is formed. Stir in hazelnu and chocolate chips. Turn dough out onto a floured surface, knead it several times and divide in half Working on a large buttered and floured baking sheet with floured hands form each piece of dough into a flattish log that is 12 inch es long by 2 inches wide. Arrange the logs 3 inches apart on baking sheet. Bake for 35 minutes. Let logs cool o baking sheet on a rack for about 10 utes. Reduce oven temperature to 300° On a cutting board (or on cookie sheet) cut the logs crosswise on the diagonal into 3/4-inch slices. Arrange the biscotti cut sides down, on baking sheet. Bake for 5-6 minutes on each side, or until biscotti are pale golden. Transfer biscotti to racks to cool. Store them in airtight containers. Makes 3 dozen cookies. ci/ NOTE: To toast and skin hazelnuts, arrange nuts in one layer in preheated 350° F. oven for 10-15 minutes or until they are colored lightly and skins blis- tered. Wrap nuts in a kitchen towel am let them steam for 1 minute. Rub nuts in the towel to remove as much skin as possible and let them cool. E
