MINIATURE BAKED ALASKA
(DAIRY)
4 (each 1-inch thick) slices pound
cake
1 pint strawberry ice cream
3 egg whites
1/2 cup sugar
4 strawberries for garnish
Note: For ice cream, you can
substitute frozen yogurt.
Preheat oven to 500F. Place
pound cake slices on a baking sheet.
Mound a scoop of ice cream on top
of each slice. Place in freezer while
making meringue (or may be frozen
overnight at this point). Whisk egg
whites at high speed until they peak
softly. Gradually beat in sugar until
stiff peaks form. Spoon over ice
cream to cover completely, roughing
up the surface with a fork. Bake in
preheated oven 3-4 minutes or until
meringue is beginning to turn gold-
en brown. Watch carefully as
meringue scorches quickly ,. Serve
immediately with a strawberry on
the side. Serves 4.

(PARVE)
4 (each 1-inch thick) slices angel
food cake
1/2 cup amaretto liqueur
1 kiwi fruit, peeled and thinly
sliced
1/2 cup mandarin orange
segments
1 cup non-dairy whipped topping
4 tablespoons toasted slivered
almonds
Note: For non-dairy whipped
topping, you can substitute
whipped cream for a dairy
meal
Arrange angel cake slices on a
serving platter. Drizzle each slice
with amaretto liqueur. Top with
kiwi fruit and orange segments.
6arnish with a large dollop of
whipped topping. Sprinkle with
toasted almonds. Serves 4.
