f you think that a HMR is
medical terminology ...
wrong. It's the abbreviation
for "home meal replacement,
and it's the latest buzzword in the
supermarket industry.
HMRs represent a whole new
range of foods in today's deli-
catessen going way beyond the tra-
ditional corned beef, tole slaw and
knishes. Instead, you'll find Beef
Wellington, poached salmon, roast
game hens, and vegetarian lasagna
all prepared by talented chefs in
supermarket kitchens.
Surveys show that as family
schedules grow more demanding, at
least once a week Americans stop at
a "takeout" for some sort of ready-
to-eat dinner item.
Catering to contemporary tastes,
these takeouts have become increas-
ingly popular ... and pricey! To eat a
balanced meal, you need more than
a main dish. Add a store-prepared
salad, vegetable, potato or other
starch, and dessert and you can fig-
ure on a hefty bill. In fact, the sum
total may add up to dining at a
good restaurant.
However, if you are selective in
shopping the market, it's surprisingly
easy to expand that store-bought
entree into a satisfying, nutritionally
sound meal that won't break the bud-
get.
To make weekday dinners special
there are plenty of little touches that
don't take much time but will take
you beyond the ordinary takeout.
From the dozen recipes below,
sauces like the Dill Sauce and Mush-
room Sauce can transform and add a
sizzle to store-bought cooked fish,
chicken and even hamburgers. Round
out the meal with your choice of veg-
etables, salads and starch side dishes
and, for the finishing touch, whip up
one of the impressive desserts guaran-
teed to make any dinner spectacular.
Here are some tips and recipes to
start:
• Remove from the package. By all
means heat in the appropriate
microwave package, but serve on
your own china.
• Even store-bought barbecued
chicken tastes better if you reheat it
in a mushroom sauce (see below).
• Set the mood. That means no
television. Play some background
music. At family mealtimes, serve
each course separately instead of
