the apples, fresh cranberries and
brown sugar in a large bowl. Arrange
the fresh fruit on the bottom of the
baking pan. Spread the batter over
the fruit and smooth the top. Bake
for 45-60 minutes, until a toothpick
inserted into the center of the cake
comes out clean. Cool slightly and
turn the cake over on a service plate
(the cake must still be slightly warm
or it will not release well from the
pan). Or cut into squares while still
in the pan and serve upside down on
individual serving plates. Serve
warm or at room temperature with
vanilla ice cream or fresh whipped
cream. Serves 8 12.

BAKED YAMS, GARLIC AND
ONIONS
3 cups sliced red onions
3 cups thin sliced, peeled yams
3 cup thin sliced, peeled yellow
sweet potatoes
1 cup peeled garlic cloves, unsliced.
2 cups apple cider
2 T Apple Jack (optional)
1/4 cup brown sugar
1/2 - 1 t kosher salt
Ground black pepper to taste
2 T extra virgin olive oil
Preheat oven to 350F. Toss onions,
yams, sweet potatoes and garlic in a
large bowl. Arrange the mixed veg-
etables in a 9x13 baking dish, or
equivalent. Combine cider, Apple
Jack, brown sugar and salt and stir
until smooth. Pour over the onion-
potato mixture. Sprinkle pepper and
drizzle olive oil over the vegetables
and bake, covered with foil for 50-
60 minutes, until the potatoes are
cooked through. Remove foil, raise
heat to 375F and continue baking
for another 20-30 minutes until the
tops of the vegetables are lightly
browned and the liquid is bubbly.
Serve hot or warm. Serves 6-8 with
other side dishes.
