indoor or outdoor events.
Cooler weather and foot-
ball games are decidedly here and
these menus often reflect a more
casual gathering, around the car or
television.
You can easily give your party an
exotic touch while still having time to
cheer for your team. Include a color-
ful autumn leaf in each invitation.
Make your own 3- to 12-foot sub.
Here's how: Have a piece of wood
(or Formica) cut into a long narrow
shape. If using wood, cover tightly
with heavy aluminum foil. Slice the
ends of all but the end pieces of
French or Italian loaves. Simply fit
them closely together on the board
and fill to your heart's desire.
I usually use grilled vegetables,
bought or homemade, and marinated
artichokes. Season the bread with
olive oil and herbs. Slice into portions
using toothpicks and olives for each
serving. Garnish with fresh kale.
Serve with the easy recipe for
Molded Potato Salad. It's quick yet
impressive.
If you're in the mood for some-
thing really homey and one-dish, try
the New England Boiled Dinner or
Pot Roasted Chicken. Turn ordinary
chicken soup into a one-dish meal by
making mini-matzah balls and adding
cooked rice and chopped spinach.
Going as a guest? Volunteer to
bring the chili and cornbread. They'll
never forget to include you on the
guest list!

SPICY BLACK BEAN CHILI
(DAIRY)
1 cup chopped onions

15-ounce can southwestern-style
black beans with cumin and chili
spices, undrained (or add your

own cumin and spices to plain
black beans)
14.5-ounce can diced peeled
tomatoes with chili or salsa
seasoning, undrained (or add
your own seasonings to plain
canned diced tomatoes)
11-ounce can Mexican-style corn,
with red and green peppers
1 cup shredded cheddar cheese
Spray a nonstick skillet with cook-
ing spray and heat over medium-high
heat. Add onions and cook and stir
until tender. Stir in beans, tomatoes
and corn. Bring to a boil. Reduce
heat to low and simmer 5-8 minutes
or until thoroughly heated. Place
mixture in serving dish. Sprinkle with
the cheese, cover for a few minutes to
melt cheese. Serves 4.

Place burgers on a preferably elec-
tric hot plate to keep warm. Sur-
round with small dishes of assorted
garnishes and a basket of
breads.
