"If you're an aficionado of gourmet food, you probably deplore the mounting number of chain formula and independent restaurants fighting to keep costs down and profits up by popping pre-cooked frozen entrees into a microwave. "On the other side of the coin, a number of establishments over the years have prepared fresh ingredients and employed some of the country's sparse number of certified master chefs and certified executive chefs. "In a shifting economy and popula- tion trends, many of these fine dining places are no longer in business. Restaurants that included Red Fox and Sly Fox in Birmingham, Jim's Garage in downtown Detroit, South- field's Restaurant Duglass and Great Dane, Les Auteurs in Royal Oak, Benchmark in Southfield's former Michigan Inn, and so many more. "Many of the fine dining spots that have disappeared from the scene are those which finished tops in a number of restaurant surveys. Joe Muer's on Gratiot in Detroit, was a run-away favorite for its consistent excellence in the quality and preparation of food. "The London Chop House was a close second. Ponchartrain Wine Cel- lars was highly-rated. Another favorite was Ciungan's in Ecorse. This old din- ing spot was short on atmosphere'but long on great seafood. "Fortunately, some of the top fin- ishers are still with us. Gandy Dancer in Ann Arbor, deservedly made the list. Carl's Chop House was a top choice and remains a good dining establishment. "Pasta, anyway you like it, was and remains a top favorite'at Roma Cafe. Other Italian spots mentioned in the surveys were Lelli's and Mario's, both still going strong. "For pizza, Buddy's continues to _head the list. For romantic dinners, Van Dyke Place, Cafe Cortina, Excal- ibur and the Lark were rated the swooniest, and still attract lovers. "Of interesting note is that although some fine restaurants are doing well and drawing crowds in the suburbs, perennial favorites in down- town Detroit got the highest marks. "It's a shame that not many have withstood the rigorous test of time and a volatile economic climate as well as a fickle public." ❑
