Unconstructed Kugel

from heat and set aside until the pasta
is cooked.
Drain the pasta in a colander and
place in a large bowl. Toss well with -
sweet sauce. Add dried fruits and
nuts and toss well. Serve on indi-
vidual plates sprinkled with cinna-
mon. Can also be served at room
temperature. Makes 10-12 small
servings.

HARVEST APPLE COOKIES
These cookies are easy to make
and ever so moist. Each is like eating
a little apple muffin or scone.
1/2 cup butter, margarine or
vegetable oil
1 1/3 cup brown sugar
1 egg
2 cups flour
1/2 t salt
1 t baking soda
1 t cinnamon
1/2 t nutmeg
1 cup chopped walnuts or pecans
1 cup raisins, dried cherries or
dried cranberries
1/4 cup apple juice or cider
1 cup peeled, minced apples

Preheat oven to 400E Cream but-
ter, margarine or oil withsugar and
egg. In a second bowl, combine dry
ingredients. In a third bowl, take 1/2
cup of the flour mixture and mix
with nuts and raisins. Add the raisin
mixture to the butter/sugar/egg mix-
ture and mix well. Mix in the juice
and apples. Add the remaining flour
mixture and mix until the flour is just
incorporated. Drop by rounded tea-
spoonfuls onto a greased or parch-
ment lined cookie sheet and bake for
10-12 minutes. Let cool, glaze and
sprinkle with sesame seeds, if desired.
Makes 2-3 dozen cookies.

Glaze:
1/2 cup confectioner's sugar
2-3 T apple juice or cider
Stir sugar and juice together until
smooth. Spoon or brush glaze over
cooled cookies. Let sit until the glaze
is set. ❑
