3/4 cup brown sugar
1/4 cup vegetable oil
3/4 cup strong brewed coffee,

cooled

Preheat oven CO 350. Spray a 9x5-
inch loaf pan with non-stick cooking
spray. In a medium bowl, combine
flour, cinnamon, baking powder,
baking soda and salt. In a separate
bowl, beat eggs and brown sugar
until smooth. Add oil, honey, raisins
and orange zest to the eaa
bb mixture
and stir well to combine. Add 1 cup
of the flour mixture to the egg mix-
ture and beat to combine. Add cof-
fee, fold in remaining flour mixture
and pour the mixture into the pre-
pared loaf pan. Bake 1 hour or until
the a toothpick inserted into the
center comes out clean. Cool slightly
and remove from the pan. Makes 12
servings.

UNCONSTRUCTED KUGEL
Italian Jews often serve a first
course of pasta, even for the High
Holidays. This recipe is really a sweet
noodle kugel (without the eggs).

Instead of mixing it all together and
turning the pasta into a casserole, the
pasta is tossed just before serving with
a melted brown sugar, honey, dried
fruit and nut mixture. Dust this
unconstructed kugel with a little cin-
namon to serve. This kugel can be
served hot or at room temperature.
1 pound angel hair, vermicelli or
thin spaghetti, uncooked
1 t salt
1/4 cup water
1/4 cup (half a stick) butter or
margarine
1/2 cup brown sugar
1/2 cup honey
1 - 1 1/2 cups dried fruits, such as
cherries, raisins, apricots, etc.
i - 1 1/2 cups chopped nuts, such
as walnuts, pecans, sliced
almonds, etc.
2 t cinnamon

Bring a gallon of cold water to boil
in a large pot.
Add salt and cook the pasta
according to the package directions,
until al dente.
As the pasta is cooking make the
sauce. Combine water, sugar, honey
and butter or margarine in a large
skillet. Cook over medium high heat
until the sugar is dissolved. Remove
