WARM RICE TABBOULEH
(PAREVE)
2 cups water
2 T. balsamic vinegar
1 (6-ounce) package rice pilaf mix
1/2 cucumber, unpeeled, cut in
1/2-inch dice
2 tomatoes, cut in 1/2-inch dice
3 scallions, thinly sliced
1 cup finely snipped parsley
1/4 cup chopped fresh mint
Fresh ground pepper to taste
In medium saucepan, bring water
and vinegar to a boil. Add the con-
tents of the pilaf package. Reduce
heat to low. Cover and simmer for 25
minutes until most of the liquid is
absorbed. Transfer to a large bowl.
Add the cucumber, romatoes, scal-
lions, parsley and mint. Season to
taste with pepper. Serve warm. Serves
6 to 8.
MILE HIGH CELEBRATION
FLAN (PAREVE)
1 (12-inch) round sponge cake flan
shell
3 T. Sabra or other orange-flavored
liqueur
3 T. raspberry jam, melted
4 large ripe peaches, unpeeled and
cut in wedges
1 pint raspberries
3 egg whites
1/2 cup sugar
Preheat broiler. Reserve eight rasp-
berries for garnish. Place the sponge
cake on a baking sheet. Brush with
Sabra ro cover the base. Spread with
raspberry jam. Arrange peaches and
raspberries over jam layer. Whisk egg
whites to peak softly. Gradually add
sugar and continue whisking until
stiff. Spoon over peaches and raspber-
ries, spreading to the edges. Rough
up the surface with a fork. Place
under the preheated broiler for 2 to 3
minutes until just beginning to
brown. Watch carefully, checking
after each minute. Sprinkle reserved
raspberries over. Serves 8.

heavy skillet, large enough for the
drumsticks to fit snugly. Pour enough
boiling water over to barely cover.
Bring to boil, cover and cook on low
heat for 25 minutes, shaking the pan
often to avoid sticking (add a little
more water if needed). Chicken
should be cooked all the way through
(test by piercing with a sharp knife at
thickest part) and liquids should have
reduced to a thick sauce. Serve hot.
Makes 6 servings. Serving size: 2
