crumbs
1 Tbsp. Dijon mustard
1/4 tsp. ground black pepper
Butter or olive oil for pan frying

Combine all ingredients and mash
together with a fork. Form into 6 pat-
ties and set aside. Heat 3 Tbsp. of but-
ter or oil in a large skillet over medi-
um-high heat. Add salmon cakes and
cook for 3-4 minutes on each side
until the patty is cooked through, but
not dry. Serve alone with wedges of
lemon or lime, or with cucumber
sauce. Makes 6 regular patties or 24
mini cakes.

Preheat oven to 350 degrees. Place a
large pan filled half-way with hot
water in the oven while you prepare
the custard. Grease or spray six 6- to
8-ounce ramekins or baking dishes.
Set aside.
Combine all flan ingredients in a
medium bowl and stir well to corn-
bine.
Divide the mixture among the pre-
pared ramekins and place them in the
pan filled with water. Bake for 45
minutes until the custard is just set.
Serve with black breads and tomato
sauce, if desired. Serve hot. Makes 6
servings.
